Sochivo – a traditional lean dish
Juice is called cannabis, poppy seed or other seed juice. It was eaten as a seasoning, instead of butter. Also called lean meat, made from softened wheat or rice, seasoned with seed juice and honey with chopped walnuts.
It is well prepared on the eve of great holidays, the so-called Christmas Eve or nomad. It is generally accepted to eat, according to the Church Charter, in the evening, after a complete refusal of food throughout the day.
Guests were not invited to the Christmas Eve. But the children smashed sympathetically in the evening to the homes of their relatives, treated them to grandparents. Dinner always began with a juiciness, it was necessary to eat it first of all. Everyone at the table should have eaten at least a small amount, and then, according to legend, he will live in prosperity and health all year.
At first, it was prepared from rye grains, but with a decrease in its crops and an increase in wheat, they gradually began to switch to preparing from wheat grains. In the 20s of the last century, due to the ban on the sale of unprocessed grain in stores in the USSR, when wheat was very difficult to obtain in urban areas, people began to prepare it from more affordable rice.
Sochivo is a dish that has special meaning and is not everyday food. During the post, the resources of the human body are involuntarily mobilized, internal tension arises. But this tension does not pass by itself even after the end of the post. To remove it, they came up with a sympathy. Due to the ingredients contained in the dish, such as wheat or rice grains, walnuts and honey, it is rich in calories. In addition, it contains poppy milk, and poppy, as you know, has a relaxing effect that relieves anxiety and fear. It is precisely this effect that must be achieved with the help of an overeating.
There are not so few ways to prepare a juicer. Consider a few traditional recipes.
The standard ingredients for juices are: 1 cup of millet, 3 tablespoons of honey, 100 grams of poppy seeds and walnuts about 100 grams. A simple way to make juices is the following: you need to boil ordinary porridge in water from wheat grain. Poppy must be ground to form poppy milk and mix it with honey. All this must be mixed with boiled wheat grain and add chopped walnuts.
More complex recipes exist. First, the grain must be allowed to soak in cold water. Sometimes this is done in the evening, but 2-3 hours will be enough. Then the grain must be thrown into a sieve and washed with hot water to get rid of excess flour. Then transfer the grain to the pan and cook it with water in a 1: 3 ratio over low heat for about 2 hours or simmer in the oven at a temperature of 180 ° C until the grain becomes soft.
Poppy should be poured with boiling water and let it brew until it swells. A small part of the resulting decoction of the grain should be poured into a separate cup and mix it with honey. The rest of the broth can be poured, it will not come in handy. The resulting honey water should be watered with wheat. When the poppy swells, it is necessary to drain the water from it and scroll through the small grill several times in a meat grinder. Finely chop the nuts, and you can use not only walnuts, but also almonds. Wheat, poppy seeds and nuts must be mixed together and let it brew. The dish is ready.
Usually, before preparing a cochlea, wheat grains were pounded in a mortar with warm water so that the casing moved away. But healthier it is advised to cook it comically from whole grains, not peeled. If you prepare a juicy sprouted grain, then it does have healing properties, it strengthens health and restores the body, especially after heavy operations.
